Brooklyn {NY Part I}

At the end of May I met up with some girlfriends that

I've known for over a century, for a little reunion weekend

in Manhattan. Before everyone got there, 

another friend and I decided to go out a little earlier

to see some other friends and take in the sights

in Brooklyn. I was excited since I've never been to Brooklyn

on my countless trips to Manhattan. Well that's a half lie, I have

walked the Brooklyn Bridge to go to Grimaldi's, but that doesn't count in my opinion.

Brooklyn did not disappoint. It was much bigger than I 

had expected. For some reason in my mind Brooklyn was 

a borough of cute brownstones and that's it.

Boy was I wrong. Yes there are the quaint brownstone neighborhoods, 

but Brooklyn is also a decent sized city with lots of hustle and bustle.

We spend a couple days there, and I am itching to go back again 

to explore more. But I feel like I got a decent tasting.

Great atmosphere, amazing food, and stunning views of

Manhattan.

Moab

 About a month ago my brother, cousin and I planned a little day trip

down to Moab for some hiking, exploring and a healthy dose of nature.

When we got into Moab the weather was not on our side, grey skies and scattered showers.

Lucky for us after exploring some, the skies cleared, the sun shined and we 

kept on doing our thing. If you haven't had the chance to see Moab or 

any of the red rock country in Utah, put it on your bucket list.  It really is such

a magnificent place that's beauty is awe-inspiring and leaves you refreshed.

A few photos as of late. I have so much catching up to do with
my little blog. But time is always running low and I'm just trying to
keep afloat with the daily grind...aren't we all!
I've been busy moving, working too much, trying to balance friends and family,
taking advantage of the beautiful weather {ps. first year I have allergies, what the crap}, and
a quick trip to NYC, I'll get around to posting those photos soon.
I wish I could purchase more hours in the day!

Spanish Tortilla

Growing up in a house where my mother is Chilean and my father is Chilean/Italian, 

food was an infusion of many cultures. Chilean dishes, mixed in with Italian, 

and of course my mom made sure to incorporate the dishes from the U.S.

I grew up eating tortilla. In fact I didn't know that a tortilla could also be the yummy flat-bread-type that Mexicans use in their cooking until about 6th grade {we didn't go out to eat much growing up}.

I used to think tortilla de papas was a Chilean dish, but have now figured out its roots originated from Spain.  Makes sense since they did colonize South America.

The other day when I was at my parents house my mom had made some 

and it'd been a while since I had some. I quickly heated up a slice, followed by a second slice.

It's one of those comfort foods that brings back nostalgic memories of my childhood.

It's creamy, buttery, and crunchy on the edges. Basically all of my favorite components when

it comes to food. I've been seeing recipes all over the internet of

Spanish Tortilla and have been wanting to try some recipes. I found this one on Bon Appetite 

and am thinking its time I learn to make this dish.

Happy long weekend...

Happy long weekend everyone! I'm thrilled Memorial Day weekend is here.

It always marks the start of Summer for me and that is beyond exciting.

I'll be moving most of the weekend, not far, but I loathe moving. I am 

the type that likes to get everything done and organized right away or else I can't rest.

So no doubt I'll be moving today and tomorrow and possibly into the holiday, but 

at least there is light at the end of the tunnel. On Tuesday I fly out to NYC

for a little reunion with some dear girlfriends. So that will be my reward after

hauling boxes up and down stairs. Life's always a balancing act!
