Magical Spring

I think there's always something magical
about spring...especially when you 
have our gorgeous mountains still white with snow, 
then you have the valley that is blooming 
with bright vibrant flowers, and green rolling pastures.

The contrast is quite the sight.
And it's not difficult to appreciate
the beauty that constantly surrounds me.

One of those weeks...

It's been a week, 
one of those weeks where
I'd just like to hibernate because
I think it'd be easier, 
way easier.

For starters my car got hit, 
a hit and run, 
I wasn't even in my car.
I was at dinner, & when I came out, 
bam there it was, it'd been hit.
I can't believe how inconsiderate people are.

I went to spin class the other day after work
on a day I don't usually go.
I'm pretty sure I was biking next to the plastics from  the movie The Mean Girls.
They were beyond mean to the substitute, 
would make snide remarks and 
negativity was seething from their pores.
I couldn't handle it anymore so I got up and left
10 minutes early, while walking out I heard them laughing
and saying I couldn't handle the class, which I wanted 
to turn around and say, 'I can't handle your high school meanness!'
But not worth my time or energy, I believe in karma.
What goes up, must come down right?

Then to top it off this week I lost 
my favorite earrings yesterday.

 I realize there are way bigger problems in the world then 
my meager issues or crappy weeks, 
but sometimes they do feel big and you just want to hide out in your 
home till the bad week ends.
The upside, I believe all bad things happen in 3's, 
so I'm thinking I'm done...knock on wood!

Also on the upside, I saw this video and absolutely loved it!
Have I ever mentioned that before I die, my goal is to see all the continents of the earth?
I've got 3 down, 4 more to go.
Good thing I have a lifetime to do it versus how these guys did it.

San Jorge aka St. George

St. George is just never a bad idea, 
throw a girls weekend in the mix, 
and it's just bound to be a good time.

The highlights:
Bear Paw Cafe for breakfast.
The best consignment shops.
Snow Canyon hikes.
Bubble tea {I got almond joy, it was a party in my mouth}
Movie's galore.
Anasazi Steakhouse...beyond amazing.

Brunette Crazies

The last time I saw my friend Lindsay, 
or Linny-Lou as we all call her, 
we were basking in the beautiful 
island of Kauai... which was a few years ago.

We were clearly overdue for a visit, 
I think it's actually my turn
to go visit her in Seattle next.

And though her visit was short, one night, 
we were back to our old shenanigans.
Eating good food, a must, obviously.
Laughing and making fools of ourselves.
Reminiscing about the good ol' days
& catching up on the current days.

I am blessed to have many a friend like her, 
some I get to see every other month over dinners, 
others every blue moon.

But no matter the time and distance
we always pick up right where we left off.

Green Mornings

Lately I've really been loving
this green breakfast I've been having.
It's nothing special, 
but it has all the nutrients I need, 
it's fast preperation,
which I need
because every morning
I run late, 
and it fills me up.

The green smoothie recipe is here.
As for the toast and avocado, 
it's easy as can be.
1 piece whole wheat toast
avocado mashed up
a titch of lemon or lime juice {keeps your avocado fresh}
and some salt.

Really you can get creative with both things, 
as far as what you put in them.
It's a great breakfast and
it's all about 300 calories total.

Not a shabby way to start my day!

As of late...

Life's been a bit hectic lately...
who am I kidding, 
as it is for all of you, 
it is the same for me.
Life never, ever slows down.

It's been a crazy couple weeks with 
family in town, 
going to a beautiful cabin, 
doing some shopping at the 
fabulous and new
breathing in the fresh
new spring air &
listening to general conference.

As always I feel super duper blessed 
that my life is filled with
good people, 
good food
 & the gospel.

Now if I can just
master this 
thing called 
time management
I'll be even better.
