weekend in snaps
This past weekend flew by and
I didn't get a minute to actually sit
down and relax until last night.
Friday I went to my first Warren Miller show,
I must say I'm not a skiier, but it
made me want to give it a good college try.
Saturday I moved and then hurried up and
got ready for our family Halloween party.
So with all of that, last night I crashed.
But no complaints here, it was
a work hard, play hard kind of weekend.

Babysitting for 24 hours.
An overnight advenutre babysitting my nieces...sans my nephew {whom my brother took care of}
turned out to be so much fun. Don't get me wrong it was lots of hard work...
especially with two of them waking up frequently in the night. I don't know how I'll survive not
getting a full 7-8 hours of sleep one day when I have my own,
but my madre assures me that God gives moms
extra love and energy to handle it just fine.
I kept the girls busy with pizza, merry-go-rounds, toy stores,
pumpkin patches, feeding ducks, coloring, & watching cartoons.
And luckily my mom joined us some of the time to help out,
so I can't take full credit here.
I was wiped out by the time their parents got back from their weekend getaway.
But had so much fun being with my cute little chiclets as I like to call them.
I even offered to take them again for another overnight advenure in the future.

Pumpkin Ooey-Gooey Goodness
My friend made this a couple weeks ago and invited a bunch of
us gals over to gab and eat. The cake didn't make it out onto our plates,
we each had a fork and ate it from the 9x13...the whole thing!
That's how good it is. Naturally I had to get the recipe asap.
I made it this past weekend and it was a hit.
I made it this past weekend and it was a hit.
Now the name of this cake is Better Than Sex Cake
{now they just added the Pumkin in front with the new ingrediant}.
I've always thought it was the lamest name ever...so I'm calling
it Pumpkin Ooey-Gooey Goodness, you heard it here first folks.
Let's be honest who cares about the name, the whole point is
it's the most amazing cake and with the twist of pumpkin, it's
going to be what I make every year around this time.
So knock yourselves out, wear some stretchy pants and
make it this weekend, and maybe yours will make it to the
dessert plates.
Here's the recipe:
Ingredients:
1 box yellow cake mix {only use the cake mix, don't add oil, eggs, etc}
1 small can pumpkin puree {don't use the pumpkin pie puree}
1 - 14 oz. can sweetened condensed milk
1 - 8 oz. tub cool whip
1/2 bag Heath Bits
Caramel Sundae Sauce
Directions:
In a large bowl, mix together the cake mix and pumpkin puree until a smooth batter forms.
Pour batter into a well greased 9x13 baking dish. Bake at 350ยบ according to the directions for a 9x13 cake on the cake mix box.
Let cool for about 10 minutes after baking. Using the bottom of a wooden spoon, poke holes all over the top of the cake
Pour the sweetened condensed milk over the cake, filling the holes. Refrigerate for 30 minutes.
Spread the cool whip over top of cake. Sprinkle on the heath bits, and drizzle caramel over top (just to your liking). Refrigerate for 3-4 hours, or overnight.
With that sweet treat I'm off to babysit my nieces and nephew till tomorrow...
who are all under the age of six...send prayers my way.
Happy weekending!

Stewart Falls
A couple weekends ago while my cousin was in
from Jersey we decided to go up the canyon
to see all the foliage and do one of my
favorite hikes, Stewart Falls.
It was a bit overcast that day, but it
turned out to be perfect, a cool breeze accompanying
us all the way up and down. It was so pretty
and for some reason I always forget how pretty
it is up the canyon when all the leaves start changing.
We gabbed {naturally} all the way up to the falls, and took a gazillion
pictures, and then sat by the falls eating our lunch while mesmerized by the waterfall.
It was a perfect start to my fall season.
If you are ever in the Provo area and have never hiked to Stewart Falls,
I highly suggest bringing a good hiking partner, some lunch
and enjoying looking at the falls and all the beautiful surroundings.
